Blender Sponge Cake


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup whole milk (or any milk of your choice)
  • ½ cup vegetable oil (or melted butter)
  • 1½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and flour a round or rectangular cake pan.
  2. In a blender, add the eggs and sugar. Blend for about 1–2 minutes until the mixture is pale and frothy.
  3. Add the milk, oil, and vanilla extract. Blend again for a few seconds until well combined.
  4. Add the flour, baking powder, and pinch of salt. Blend on low speed just until the batter is smooth and lump-free. Do not overmix.
  5. Pour the batter into the prepared pan and gently tap it on the counter to remove any air bubbles.
  6. Bake for about 30–40 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Dust with powdered sugar or frost as desired. Enjoy!
