Blender Soft Apple Cake

Ingredients

  • 2 medium apples, peeled, cored, and chopped
  • 2 large eggs
  • ½ cup (120 ml) vegetable oil or melted butter
  • ¾ cup (150 g) granulated sugar
  • 1 tsp vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) round cake pan or line it with parchment paper.
  2. Add the chopped apples, eggs, oil (or melted butter), sugar, and vanilla extract to a blender. Blend until smooth and creamy.
  3. In a large bowl, sift together the flour, baking powder, cinnamon (if using), and salt.
  4. Pour the blended mixture into the dry ingredients. Gently fold until just combined — do not overmix.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Dust with powdered sugar if desired, slice, and enjoy!
