Blender Soft Apple Cake

Ingredients

  • 2 large apples (peeled, cored, and chopped)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) round or square cake pan.
  2. Blend Wet Ingredients:
    In a blender, combine chopped apples, eggs, oil, sugar, and vanilla. Blend until smooth.
  3. Mix Dry Ingredients:
    In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. Combine:
    Pour the blended apple mixture into the dry ingredients and gently mix until just combined. Do not overmix.
  5. Bake:
    Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & Serve:
    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or serve with a dollop of whipped cream if desired.
