Ingredients
- 2 large apples (peeled, cored, and chopped)
- 2 large eggs
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp ground cinnamon (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) round or square cake pan.
- Blend Wet Ingredients:
In a blender, combine chopped apples, eggs, oil, sugar, and vanilla. Blend until smooth. - Mix Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. - Combine:
Pour the blended apple mixture into the dry ingredients and gently mix until just combined. Do not overmix. - Bake:
Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. - Cool & Serve:
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or serve with a dollop of whipped cream if desired.
