- 1 large orange (seedless, washed well)
- 3 large eggs

Instructions
- Prep the orange: Cut the whole orange into chunks (remove any seeds and excess white pith if needed).
- Blend: In a blender, add the chopped orange, eggs, sugar, and oil. Blend until completely smooth and creamy.
- Combine: In a large bowl, sift together the flour, baking powder, and salt.
- Mix: Pour the orange mixture into the dry ingredients and gently mix until just combined — do not overmix.
- Bake: Pour the batter into a greased and floured 8-inch round cake pan. Bake in a preheated oven at 350°F (175°C) for 30–40 minutes or until a toothpick comes out clean.
