Blender Orange Cake

Ingredients

  • 2 medium oranges (seedless, washed, cut into chunks, peel on)
  • 3 large eggs
  • 1 cup vegetable oil (or melted butter)
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • Optional: 1 tsp vanilla extract or orange zest for extra flavor
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round or loaf cake pan.
  2. Add the chopped oranges, eggs, oil, and sugar to your blender. Blend until smooth and creamy.
  3. In a large bowl, whisk together flour, baking powder, and salt.
  4. Pour the orange mixture from the blender into the bowl and gently mix until just combined — don’t overmix.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool completely, then dust with powdered sugar if desired. Slice and enjoy!
