Big apple fritters are a deep-fried pastry packed with fresh apples and warm spices, coated in a sweet glaze. This homemade version tastes just like the bakery-style ones – maybe even better!
🍏 Ingredients:
For the Fritters:
- 2 large apples (Granny Smith or Honeycrisp), peeled and diced
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 2 large eggs
- ¾ cup whole milk
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Vegetable oil (for frying)
For the Glaze:
- 1½ cups powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
👨🍳 Instructions:
- Prep the Apples:
- Peel and dice apples into small chunks.
- Optionally, sauté in a pan with 1 tbsp butter and a pinch of cinnamon for 2–3 minutes for softer apples.
- Make the Batter:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk eggs, milk, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fold in the diced apples. The batter will be thick and chunky.
- Fry the Fritters:
- In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
- Carefully drop heaping spoonfuls (¼ cup or ice cream scoop size) of batter into the hot oil.
- Fry 2–3 fritters at a time, turning occasionally, for 3–4 minutes or until deep golden brown.
- Remove with a slotted spoon and place on a paper towel-lined plate to drain.
- Make the Glaze:
- Mix powdered sugar, milk, and vanilla extract in a bowl until smooth.
- Dip warm fritters into the glaze or drizzle over the top.
- Cool & Serve:
- Let glaze set for a few minutes.
- Serve warm or at room temperature.
🍽️ Serving:
- Makes about 8–10 large fritters.
- Best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
🔥 Tips:
- For extra flavor, add a splash of apple cider to the glaze.
- Don’t overcrowd the pan – it can lower the oil temperature and make the fritters greasy.
- You can add a touch of lemon zest to brighten the flavor.
