This creamy and decadent fruit salad is a delightful blend of tropical flavors and textures. It’s a sweet and satisfying dessert or side dish, perfect for potlucks, barbecues, or any occasion that calls for a touch of indulgence.

Ingredients:

  • 1 (15 ounce) can fruit cocktail, drained
  • 1 (20 ounce) can crushed pineapple, drained
  • 1 (21 ounce) can cherry pie filling
  • 2 ripe bananas, sliced
  • 1 (8 ounce) container whipped topping (like Cool Whip), thawed
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1/2 cup shredded coconut (optional)
  • 1/4 cup chopped maraschino cherries (optional, for garnish)

Instructions:

  1. Prepare the Pudding Mixture: In a large bowl, whisk together the instant vanilla pudding mix and 1/2 cup of the drained pineapple juice (from the crushed pineapple can). Let it sit for a few minutes to thicken slightly.
  2. Fold in Whipped Topping: Gently fold the thawed whipped topping into the pudding mixture until well combined.
  3. Combine Fruits: In a separate large bowl, combine the drained fruit cocktail, drained crushed pineapple, cherry pie filling, and sliced bananas.
  4. Combine Pudding and Fruits: Pour the pudding mixture over the fruit mixture and gently fold until all the fruits are evenly coated.
  5. Add Coconut (Optional): If desired, stir in the shredded coconut.
  6. Chill: Cover the bowl and refrigerate for at least 1 hour, or preferably longer, to allow the flavors to meld and the salad to chill thoroughly.
  7. Garnish and Serve: Before serving, garnish with chopped maraschino cherries, if desired. Serve chilled.

Tips and Variations:

  • Fruit Variations: You can add other fruits like mandarin oranges, strawberries, or kiwi.
  • Nutty Addition: Add chopped nuts like pecans or walnuts for a crunchy texture.
  • Cream Cheese: Add 4 ounces of softened cream cheese to the pudding mixture for a richer flavor.
  • Amaretto or Rum Extract: Add a splash of amaretto or rum extract to the pudding mixture for a more sophisticated flavor.
  • Layered Parfaits: Layer the fruit salad with vanilla wafers or pound cake cubes in individual parfait glasses for an elegant presentation.
  • Make-Ahead: This fruit salad can be made ahead of time and stored in the refrigerator for up to 2 days.
