Heat oil in a large non-stick skillet over medium heat. Spread the potato mixture into the pan and flatten it like a large pancake or crust. - Crisp It Up:
Cook for 5–7 minutes until golden brown and crispy on the bottom. Flip carefully (cut into sections if needed), then cook the other side for another 5–6 minutes. - Add Cheese:
Sprinkle mozzarella evenly over the top, cover the pan with a lid, and cook for 2–3 more minutes until the cheese melts. - Serve:
