Ingredients
- 2 pounds fresh strawberries, hulled and sliced
- 2 cups heavy whipping cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 16 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 box (14.4 oz) graham crackers (about 3 sleeves)
- Optional garnish: additional strawberries, crushed graham crackers
Instructions
- In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Set aside.
- In another bowl, beat the softened cream cheese and granulated sugar until smooth and fluffy.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- In a 9×13 inch baking dish, spread a thin layer of the cream cheese mixture on the bottom.
- Layer graham crackers over the mixture to cover the bottom of the dish.
- Spread ⅓ of the cream cheese mixture over the graham crackers, then top with a layer of sliced strawberries.
- Repeat the layers two more times: graham crackers, cream cheese mixture, strawberries.
- Finish with a final layer of cream cheese mixture and a decorative layer of strawberries on top.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the graham crackers to soften.
- Slice and serve chilled. Enjoy!
