BEST Strawberry Cream Cheese Icebox Cake

Ingredients

  • 2 pounds fresh strawberries, hulled and sliced
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 16 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 box (14.4 oz) graham crackers (about 3 sleeves)
  • Optional garnish: additional strawberries, crushed graham crackers

Instructions

  1. In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Set aside.
  2. In another bowl, beat the softened cream cheese and granulated sugar until smooth and fluffy.
  3. Gently fold the whipped cream into the cream cheese mixture until well combined.
  4. In a 9×13 inch baking dish, spread a thin layer of the cream cheese mixture on the bottom.
  5. Layer graham crackers over the mixture to cover the bottom of the dish.
  6. Spread ⅓ of the cream cheese mixture over the graham crackers, then top with a layer of sliced strawberries.
  7. Repeat the layers two more times: graham crackers, cream cheese mixture, strawberries.
  8. Finish with a final layer of cream cheese mixture and a decorative layer of strawberries on top.
  9. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the graham crackers to soften.
  10. Slice and serve chilled. Enjoy!
