INSTRUCTIONS
- Mix dry ingredients:
In a large bowl, whisk together the flour, baking powder, sugar, and salt. - Add wet ingredients:
Make a well in the center of the dry mix. Pour in the milk, egg, melted butter, and vanilla extract. Mix until just combined (don’t overmix; small lumps are okay). - Preheat your pan:
Heat a lightly oiled griddle or non-stick skillet over medium-high heat. - Cook the pancakes:
Pour about ¼ cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set (about 2 minutes), then flip and cook the other side until golden brown. - Serve:
