Ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk (whole or 2%)
- 1 large egg
- 2 tablespoons unsalted butter, melted (plus more for cooking)
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. (Do not overmix; a few lumps are fine.)
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter.
- Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles appear on the surface and the edges look set, about 2–3 minutes.
- Flip and cook the other side until golden brown, 1–2 minutes more.
- Serve warm with butter, maple syrup, or your favorite toppings.
