- 1 ½ cups all-purpose flour
- 3 ½ tsp baking powder
- 1 tbsp granulated sugar
- ½ tsp salt
- 1 ¼ cups milk
- 1 egg
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract (optional)
- Butter or oil for cooking
Instructions
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Mix wet ingredients: In a separate bowl, beat the egg and then whisk in the milk, melted butter, and vanilla extract (if using).
- Combine: Pour the wet ingredients into the dry ingredients. Stir just until combined. Do not overmix – the batter should be slightly lumpy.
- Rest the batter: Let the batter sit for 5–10 minutes to allow the baking powder to activate for extra fluffiness.
- Cook: Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or oil. Pour ¼ cup of batter for each pancake.
- Flip: Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden brown and cooked through.
- Serve: Serve warm with butter, syrup, or your favorite toppings!
