- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ¼ tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter (plus more for cooking)
- 1 tsp vanilla extract (optional)
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined (don’t overmix — small lumps are okay).
- Heat a non-stick pan or griddle over medium heat and lightly grease with butter.
- Pour about ¼ cup of batter for each pancake onto the pan.
- Cook until bubbles form on the surface and edges look set, then flip and cook the other side until golden brown.
- Serve warm with butter, maple syrup, or your favorite toppings.
