Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 tablespoon white sugar
- ¼ teaspoon salt
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons melted butter (plus more for cooking)
- 1 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, sift together the flour, baking powder, sugar, and salt.
- Make a well in the center and pour in the milk, egg, melted butter, and vanilla (if using). Mix until smooth — do not overmix.
- Heat a lightly buttered griddle or non-stick skillet over medium heat.
- Pour about ¼ cup of batter for each pancake onto the griddle.
- Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden brown and cooked through.
- Serve warm with butter, maple syrup, or your favorite toppings!
