Instructions

  1. In a large bowl, sift together the flour, baking powder, sugar, and salt.
  2. Make a well in the center and pour in the milk, egg, melted butter, and vanilla (if using). Mix until smooth — do not overmix.
  3. Heat a lightly buttered griddle or non-stick skillet over medium heat.
  4. Pour about ¼ cup of batter for each pancake onto the griddle.
