Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons melted butter (plus more for cooking)
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix — a few lumps are fine!
- Heat a non-stick skillet or griddle over medium heat and lightly butter it.
- Pour about ¼ cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
- Flip and cook for another 1–2 minutes until golden brown and fluffy.
- Serve warm with your favorite toppings — maple syrup, berries, or whipped cream.
