- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 tablespoon granulated sugar
- ½ teaspoon salt
- 1 ¼ cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, sift together the flour, baking powder, sugar, and salt.
- Make a well in the center and pour in the milk, egg, melted butter, and vanilla (if using). Mix until smooth — don’t overmix; a few lumps are fine.
- Heat a lightly oiled griddle or non-stick skillet over medium-high heat.
- Pour about ¼ cup of batter for each pancake onto the griddle.
- Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook the other side until golden brown, about 1–2 minutes more.
- Serve warm with butter, maple syrup, fresh fruit, or your favorite toppings.
