- 1 ½ cups unsweetened applesauce
- ½ cup vegetable oil (or melted butter)
- 1 cup granulated sugar
- 2 large eggs

- ½ tsp salt
- 1 ½ tsp ground cinnamon
- ½ tsp ground nutmeg (optional)
- ½ cup chopped walnuts or pecans (optional)
- ½ cup raisins (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together applesauce, oil, sugar, eggs, and vanilla until smooth.
- In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.
- If using, fold in nuts and/or raisins.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
