Beet Salad

INGREDENT

  • 3 medium beets, cooked and peeled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • Salt and black pepper to taste
  • Optional: handful of arugula or baby spinach for serving

Instructions

  1. Slice or cube the cooked beets and place them in a large bowl.
  2. Add the red onion, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil and balsamic vinegar (or lemon juice).
  4. Pour the dressing over the beet mixture and toss gently to coat.
  5. Season with salt and pepper to taste.
  6. Serve chilled or at room temperature, optionally over a bed of arugula or baby spinach.
