INGREDENT
- 3 medium beets, cooked and peeled
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar or lemon juice
- Salt and black pepper to taste
- Optional: handful of arugula or baby spinach for serving
Instructions
- Slice or cube the cooked beets and place them in a large bowl.
- Add the red onion, feta cheese, and parsley.
- In a small bowl, whisk together olive oil and balsamic vinegar (or lemon juice).
- Pour the dressing over the beet mixture and toss gently to coat.
- Season with salt and pepper to taste.
- Serve chilled or at room temperature, optionally over a bed of arugula or baby spinach.
