Beef & Parmesan Tortellini in Creamy Sauce Recipe

A quick and easy weeknight meal featuring tender beef and cheesy tortellini in a rich, creamy sauce.

Ingredients:

  • For the sauce:
    • 1 tablespoon olive oil
    • 1 pound ground beef
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 (14.5 ounce) can diced tomatoes, undrained
    • 1 (10 ounce) can condensed cream of mushroom soup
    • 1/2 cup heavy cream
    • 1/4 cup grated Parmesan cheese, plus more for serving
  • For the tortellini:
    • 1 (9 ounce) package cheese tortellini

Instructions:

  1. Cook the beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off excess grease.
  2. Sauté vegetables: Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
  3. Combine ingredients: Stir in diced tomatoes, cream of mushroom soup, and heavy cream. Bring to a simmer, then reduce heat and let the sauce simmer for 10 minutes, stirring occasionally.
  4. Cook tortellini: While the sauce simmers, cook the tortellini according to package directions.
  5. Combine and serve: Drain the cooked tortellini and add it to the sauce. Stir to coat. Sprinkle with 1/4 cup Parmesan cheese. Serve immediately, with additional Parmesan cheese on the side.
