Ingredients:
- For the sauce:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can condensed cream of mushroom soup
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- For the tortellini:
- 1 (9 ounce) package cheese tortellini
Instructions:
- Cook the beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off excess grease.
- Sauté vegetables: Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
- Combine ingredients: Stir in diced tomatoes, cream of mushroom soup, and heavy cream. Bring to a simmer, then reduce heat and let the sauce simmer for 10 minutes, stirring occasionally.
- Cook tortellini: While the sauce simmers, cook the tortellini according to package directions.
- Combine and serve: Drain the cooked tortellini and add it to the sauce. Stir to coat. Sprinkle with 1/4 cup Parmesan cheese. Serve immediately, with additional Parmesan cheese on the side.
