- For the Enchiladas:
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 can (4 oz) diced green chilies
- 1 can (10 oz) red enchilada sauce
- 10-12 corn tortillas (or flour, depending on preference)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tbsp olive oil or cooking spray (for greasing the pan)
- For the Green Chili Sauce:
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth (or beef broth)
- 1 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp lime juice (optional, for extra zest)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
- Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic and sauté for about 2-3 minutes until fragrant. Add the ground beef to the skillet, cooking and breaking it apart until browned, about 5-7 minutes. Drain any excess fat.
- Season the Beef: Stir in the taco seasoning and diced green chilies. Add the red enchilada sauce and simmer for 5 minutes to let the flavors meld together. Taste and adjust seasoning if necessary.
- Make the Green Chili Sauce: In a separate saucepan, heat olive oil over medium heat. Add the green chilies, chicken broth, cumin, garlic powder, onion powder, salt, and pepper. Bring to a simmer and cook for 5-7 minutes until slightly thickened. Stir in the lime juice, then remove from heat.
- Assemble the Enchiladas: Lightly warm the tortillas in the microwave for about 20 seconds to make them more pliable. Spread a small amount of the beef mixture in the center of each tortilla, then roll it up tightly and place it seam-side down in the prepared baking dish.
- Top with Cheese and Sauce: Once all the enchiladas are rolled and placed in the dish, pour the green chili sauce evenly over the top of the enchiladas. Sprinkle the shredded cheddar and Monterey Jack cheeses generously over the sauce.
- Bake: Cover the baking dish with foil and bake for 20-25 minutes. Afterward, remove the foil and bake for an additional 5-7 minutes until the cheese is bubbly and slightly golden.
- Serve: Let the enchiladas cool for a few minutes before serving. Garnish with chopped cilantro, sour cream, or your favorite toppings.
