Beef & Cheese Egg Rolls Recipe

Savory ground beef, gooey cheese, and flavorful seasonings wrapped in crispy egg roll wrappers, perfect as an appetizer or snack.

Ingredients:

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or a blend of your favorite cheeses)  
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon Worcestershire sauce
  • 1 package (16 ounces) egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Vegetable oil, for frying  
  • Optional: Chopped cilantro or green onions for garnish
  • Optional: Dipping sauce (e.g., sweet chili sauce, ranch, or a spicy mayo)

Instructions:

  1. Cook the Beef:
    • In a large skillet, cook the ground beef over medium-high heat, breaking it apart with a spoon, until browned. Drain any excess grease.  
    • Add the chopped onion and minced garlic to the skillet and cook until the onion is softened, about 5-7 minutes.
    • Stir in the cumin, chili powder, salt, and pepper. Cook for another minute, allowing the spices to bloom.
    • Stir in the Worcestershire sauce.
  2. Add the Cheese:
    • Remove the skillet from the heat.
    • Add the shredded cheddar and mozzarella cheese to the beef mixture. Stir until the cheese is melted and evenly distributed.
  3. Assemble the Egg Rolls:
    • Lay an egg roll wrapper on a clean surface.
    • Place about 2 tablespoons of the beef and cheese filling in the center of the wrapper.
    • Fold the bottom corner of the wrapper over the filling.
    • Fold in the sides of the wrapper towards the center.
    • Roll the wrapper tightly towards the top corner.
    • Brush the top corner with beaten egg to seal the edge.
    • Repeat with the remaining wrappers and filling.
  4. Fry the Egg Rolls:
    • Heat about 2-3 inches of vegetable oil in a large, deep skillet or Dutch oven over medium-high heat (approximately 350°F/175°C).
    • Carefully place the egg rolls in the hot oil, a few at a time, and fry until golden brown and crispy, about 2-3 minutes per side.  
    • Remove the egg rolls with a slotted spoon and place them on a wire rack or paper towel-lined plate to drain excess oil.  
  5. Serve:
    • Garnish with chopped cilantro or green onions, if desired.
    • Serve hot with your favorite dipping sauce.

Tips and Variations:

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef filling.
  • You can use other types of cheese, such as Monterey Jack, pepper jack, or Colby Jack.
  • For a leaner option, use ground turkey or chicken instead of ground beef.  
  • You can bake these instead of frying. Preheat oven to 400 degrees Fahrenheit, brush egg rolls with oil, and bake for 15-20 minutes, or until golden brown.
  • Make sure to seal the egg rolls very well, so that the filling does not escape while cooking.
