Ingredients
- 12 oz pasta (penne, fusilli, or your choice)
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 red bell pepper, chopped
- 1 cup mushrooms, sliced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup tomato sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- Cook the Pasta:
Cook the pasta according to package instructions until al dente. Drain and set aside. - Sauté the Vegetables:
In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 2-3 minutes. Stir in garlic and cook for another 30 seconds. - Cook the Beef:
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain any excess fat if needed. - Add Vegetables & Sauce:
Stir in the zucchini, bell pepper, and mushrooms. Cook for about 3-4 minutes until slightly softened. Add diced tomatoes, tomato sauce, Italian seasoning, salt, pepper, and red pepper flakes. Simmer for 5-7 minutes. - Combine with Pasta:
Add the cooked pasta to the skillet and toss everything together until well coated. - Serve:
Remove from heat and sprinkle with Parmesan cheese. Garnish with fresh basil or parsley. Serve warm and enjoy!
