Beef and Vegetable Pasta recipe

Ingredients

  • 12 oz pasta (penne, fusilli, or your choice)
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the Pasta:
    Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the Vegetables:
    In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 2-3 minutes. Stir in garlic and cook for another 30 seconds.
  3. Cook the Beef:
    Add the ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain any excess fat if needed.
  4. Add Vegetables & Sauce:
    Stir in the zucchini, bell pepper, and mushrooms. Cook for about 3-4 minutes until slightly softened. Add diced tomatoes, tomato sauce, Italian seasoning, salt, pepper, and red pepper flakes. Simmer for 5-7 minutes.
  5. Combine with Pasta:
    Add the cooked pasta to the skillet and toss everything together until well coated.
  6. Serve:
    Remove from heat and sprinkle with Parmesan cheese. Garnish with fresh basil or parsley. Serve warm and enjoy!
