Beef and Rotini in Garlic Parmesan Sauce Recipe

This quick and easy dish combines tender beef, rotini pasta, and a flavorful garlic Parmesan sauce for a satisfying and comforting meal.  

Ingredients:

  • For the Sauce:
    • 1 tablespoon olive oil
    • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
    • 1/2 cup chopped onion
    • 2 cloves garlic, minced
    • 1 (14.5 ounce) can diced tomatoes, undrained
    • 1 (10 ounce) can condensed cream of mushroom soup, undiluted
    • 1/2 cup grated Parmesan cheese, plus more for serving
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried basil
    • Salt and pepper to taste
  • For the Pasta:
    • 1 pound rotini pasta

Instructions:

  1. Cook the Pasta: Cook the rotini pasta according to package directions. Drain and set aside.
  2. Make the Sauce: Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside. 3. Sauté Vegetables: Add the onion and garlic to the skillet and cook until softened, about 5 minutes.  
  3. Combine Ingredients: Stir in the diced tomatoes, cream of mushroom soup, Parmesan cheese, oregano, and basil. Season with salt and pepper to taste. Bring to a simmer, then reduce heat and simmer for 10 minutes, stirring occasionally.
  4. Combine with Pasta: Return the cooked chicken to the sauce and heat through.
  5. Serve: Toss the cooked pasta with the sauce and chicken. Serve immediately, garnished with additional Parmesan cheese, if desired.
