Banana Yogurt Quinoa Bars

Ingredients

  • 1 cup cooked quinoa
  • 2 ripe bananas, mashed
  • ½ cup Greek yogurt
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup rolled oats
  • ¼ cup chopped nuts (almonds, walnuts, or pecans)
  • ¼ cup chocolate chips or dried fruit (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. In a large bowl, mix mashed bananas, Greek yogurt, honey, vanilla extract, cinnamon, and salt.
  3. Stir in cooked quinoa, rolled oats, and chopped nuts until well combined. Add chocolate chips or dried fruit if using.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 20–25 minutes or until the edges are golden brown.
