- 1 cup cooked quinoa
- 2 ripe bananas, mashed
- ½ cup Greek yogurt
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 cup rolled oats
- ¼ cup chopped nuts (almonds, walnuts, or pecans)
- ¼ cup chocolate chips or dried fruit (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking dish with parchment paper.
- In a large bowl, mix mashed bananas, Greek yogurt, honey, vanilla extract, cinnamon, and salt.
- Stir in cooked quinoa, rolled oats, and chopped nuts until well combined. Add chocolate chips or dried fruit if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 20–25 minutes or until the edges are golden brown.
