Banana Yogurt Quinoa Bars

Ingredients

  • 1 cup cooked quinoa, cooled
  • 2 ripe bananas, mashed
  • ½ cup Greek yogurt (plain or vanilla)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups rolled oats
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ cup chopped nuts (optional)
  • ¼ cup chocolate chips or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix mashed bananas, Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
  3. Add the cooked quinoa, oats, cinnamon, salt, and baking powder. Stir until well combined.
  4. Fold in chopped nuts, chocolate chips, or dried fruit if using.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake for 20-25 minutes or until the edges are golden brown.
  7. Let cool completely before cutting into bars.
  8. Store in an airtight container in the refrigerator for up to a week.
