- 2 ripe bananas, mashed

- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 ½ cups rolled oats
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ teaspoon baking powder
- ¼ cup chopped nuts (optional)
- ¼ cup chocolate chips or dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mix mashed bananas, Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Add the cooked quinoa, oats, cinnamon, salt, and baking powder. Stir until well combined.
- Fold in chopped nuts, chocolate chips, or dried fruit if using.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 20-25 minutes or until the edges are golden brown.
- Let cool completely before cutting into bars.
- Store in an airtight container in the refrigerator for up to a week.
