Ingredients:
For the Crust:
- 1 1/2 cups vanilla wafer crumbs
- 1/4 cup granulated sugar
- 6 tablespoons (3 ounces) unsalted butter, melted
For the Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened to room temperature
- 1 1/2 cups granulated sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 ripe banana, mashed
For the Banana Pudding Layer:
- 1 (3.4 ounce) package instant banana pudding mix
- 2 cups cold milk
- 1 ripe banana, sliced
For the Topping:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Vanilla wafer cookies, for garnish
Instructions:
- Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine vanilla wafer crumbs, sugar, and melted butter. Mix well until crumbs are evenly moistened. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, or until lightly golden. Let cool completely.
- Make the Cheesecake Filling: In a large bowl, beat cream cheese with an electric mixer until smooth. Gradually add sugar, beating until creamy. Stir in sour cream and vanilla extract. Add eggs one at a time, beating after each addition. Gently fold in the mashed banana.
- Bake the Cheesecake: Pour cheesecake filling over the cooled crust. Bake for 50-60 minutes, or until the edges are set and the center is just slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Remove from oven and let cool completely at room temperature, then cover and refrigerate for at least 4 hours, or preferably overnight.
- Prepare the Banana Pudding Layer: In a medium bowl, whisk together banana pudding mix and cold milk for 2 minutes, or until thickened.
- Assemble the Cheesecake: Once the cheesecake is completely chilled, remove it from the springform pan. Spread the banana pudding mixture evenly over the top of the cheesecake. Arrange sliced bananas over the pudding layer.
- Make the Topping: In a large bowl, beat heavy cream with an electric mixer until soft peaks form. Gradually add powdered sugar, beating until stiff peaks form.
- Garnish and Serve: Pipe or spread whipped cream over the banana layer. Garnish with vanilla wafer cookies. Slice and serve chilled.
