Banana Pudding Cake


Ingredients

  • For the Cake:
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1/2 cup packed light brown sugar
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup buttermilk
    • 2 ripe bananas, mashed
  • For the Pudding Layer:
    • 2 cups milk
    • 1 package (3.4 oz) instant vanilla pudding mix
    • 1 teaspoon vanilla extract
  • For the Whipped Topping:
    • 1 1/2 cups heavy whipping cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
  • Additional Ingredients:
    • 2–3 bananas, sliced (for layering)
    • 1 cup crushed vanilla wafers (plus extra for garnish)

Instructions

  1. Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix in the mashed bananas until just combined.
    • Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  2. Make the Pudding:
    • In a medium bowl, whisk together milk, vanilla pudding mix, and vanilla extract until smooth. Let it set in the refrigerator for about 5 minutes.
  3. Prepare the Whipped Topping:
    • In a large bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread half of the pudding over the cake layer. Add a layer of sliced bananas and sprinkle crushed vanilla wafers over the top.
    • Add the second cake layer and spread the remaining pudding on top. Repeat with a layer of sliced bananas and crushed vanilla wafers.
  5. Finish with Whipped Topping:
    • Spread the whipped topping over the entire cake. Garnish with more crushed vanilla wafers and additional banana slices if desired.
  6. Chill and Serve:
    • Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld. Slice and enjoy!
