Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or Greek yogurt
- 3 ripe bananas, mashed
- 1/2 cup chopped walnuts or pecans
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (for garnish)
Instructions
- Preheat Oven & Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking dish or two 9-inch round cake pans.
- Mix Dry Ingredients:
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- Cream Butter & Sugar:
- In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs & Wet Ingredients:
- Beat in eggs one at a time, then add vanilla extract and sour cream. Mix until combined.
- Incorporate Bananas & Nuts:
- Stir in mashed bananas and chopped nuts.
- Combine Wet & Dry Ingredients:
- Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.
- Bake the Cake:
- Pour the batter into the prepared baking dish.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before frosting.
- Prepare the Frosting:
- Beat cream cheese and butter together until smooth.
- Gradually add powdered sugar and vanilla extract, mixing until creamy.
- Frost the Cake & Garnish:
- Spread the frosting over the cooled cake and sprinkle with chopped nuts.
- Serve & Enjoy!
- Slice and serve at room temperature or chilled for a firmer texture.
