Banana Nut Cake with Cream Cheese

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 3 ripe bananas, mashed

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (for garnish)

Instructions

  1. Preheat Oven & Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×13-inch baking dish or two 9-inch round cake pans.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. Cream Butter & Sugar:
    • In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add Eggs & Wet Ingredients:
    • Beat in eggs one at a time, then add vanilla extract and sour cream. Mix until combined.
  5. Incorporate Bananas & Nuts:
    • Stir in mashed bananas and chopped nuts.
  6. Combine Wet & Dry Ingredients:
    • Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.
  7. Bake the Cake:
    • Pour the batter into the prepared baking dish.
    • Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
    • Let the cake cool completely before frosting.
  8. Prepare the Frosting:
    • Beat cream cheese and butter together until smooth.
    • Gradually add powdered sugar and vanilla extract, mixing until creamy.
  9. Frost the Cake & Garnish:
    • Spread the frosting over the cooled cake and sprinkle with chopped nuts.
