Ingredients:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2-3 medium bananas)
- 1/2 cup milk or buttermilk
- 1 cup chocolate chips (milk, semi-sweet, or dark)
Instructions:
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with paper liners or grease the cups.
- Combine Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- Cream Butter and Sugar:
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add Eggs and Vanilla:
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Mix in Bananas and Milk:
- In a separate bowl, mash the ripe bananas with a fork.
- Add the mashed bananas and milk (or buttermilk) to the butter mixture, and mix until just combined.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Add Chocolate Chips:
- Fold in the chocolate chips.
- Fill Muffin Cups:
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake:
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool and Serve:
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
