Ingredients

  • 3 ripe bananas (mashed)
  • 1/2 cup peanut butter (smooth or chunky)
  • 1/3 cup melted butter (or vegetable oil)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 cup milk (or as needed)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.
  2. Mash the bananas in a large bowl until smooth. Stir in the peanut butter, melted butter, and both sugars, mixing well until combined.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. If the batter seems too thick, add the milk one tablespoon at a time until the desired consistency is reached.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Enjoy your banana bread with peanut butter! You can serve it warm with an extra spread of peanut butter or your favorite topping.
