Banana Bread Cake with Cream Cheese Frosting

Ingredients

For the Banana Bread Cake:

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2–3 cups powdered sugar (depending on desired sweetness)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan (or line with parchment).
  2. Make the cake batter:
    In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
    In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla, mashed bananas, and sour cream. Gradually add dry ingredients until just combined. Fold in nuts if using.
  3. Bake the cake:
    Pour batter into prepared pan. Bake for 30–35 minutes or until a toothpick comes out clean. Let cake cool completely before frosting.
  4. Prepare the frosting:
    Beat cream cheese and butter until creamy. Add powdered sugar gradually, then mix in vanilla and salt until smooth and fluffy.
  5. Frost and serve:
