Ingredients
For the Banana Bread Cake:
- 2 to 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened

- 8 oz cream cheese, softened

- 2 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Then stir in vanilla extract and mashed bananas.
- Mix in the sour cream and milk, then gradually add the dry ingredients. Stir until just combined—do not overmix.
- Pour the batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before frosting.
Make the Cream Cheese Frosting:
- In a bowl, beat cream cheese and butter until smooth and creamy.
- Add powdered sugar, vanilla extract, and a pinch of salt. Beat until fluffy and smooth.
- Spread the frosting evenly over the cooled banana bread cake.
Optional Garnish: Top with chopped walnuts, sliced bananas, or a dusting of cinnamon.
