Banana Bread Cake with Cream Cheese Frosting

Ingredients

For the Banana Bread Cake:

  • 2 to 3 ripe bananas, mashed

  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then stir in vanilla extract and mashed bananas.
  5. Mix in the sour cream and milk, then gradually add the dry ingredients. Stir until just combined—do not overmix.

Make the Cream Cheese Frosting:

  1. In a bowl, beat cream cheese and butter until smooth and creamy.
  2. Add powdered sugar, vanilla extract, and a pinch of salt. Beat until fluffy and smooth.
  3. Spread the frosting evenly over the cooled banana bread cake.
