Baked Salmon with Roasted Vegetables

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon (sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 red bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes
  • 1 red onion (cut into wedges)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Arrange the salmon fillets in the center of the baking sheet. Surround them with the bell pepper, zucchini, cherry tomatoes, and red onion.
  3. Drizzle olive oil evenly over the salmon and vegetables. Sprinkle minced garlic, oregano, paprika, salt, and pepper over everything.
  4. Top the salmon fillets with lemon slices.
  5. Bake for about 15–20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  6. Remove from oven, garnish with fresh parsley if desired, and serve immediately.

If you’d like, I can help you adjust it for different flavors (like Asian-style or Mediterranean) — just let me know!
