Ingredients:
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 lemons (one for juice, one for slices)
- 2 garlic cloves, minced
- Salt and pepper, to taste
- Fresh herbs (such as dill or parsley), for garnish
- Optional: vegetables (like asparagus or zucchini) for roasting
Instructions:
- Preheat your oven to 375°F (190°C).
- Prepare a large piece of aluminum foil, enough to wrap around the salmon fillets completely. If using vegetables, arrange them in the center of the foil.
- Place the salmon fillets on top of the foil or vegetables. Drizzle olive oil over the salmon, then sprinkle with minced garlic, salt, and pepper.
- Squeeze the juice of one lemon over the fillets, and then place lemon slices on top of each piece of salmon.
- Fold the foil over the salmon and vegetables, sealing it tightly to create a packet. This will trap steam and keep the salmon moist.
- Place the foil packet on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Carefully open the foil packet (watch out for steam!) and garnish with fresh herbs before serving.
