Baked Salmon In Foil with Lemon Recipe

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 lemons (one for juice, one for slices)
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • Fresh herbs (such as dill or parsley), for garnish
  • Optional: vegetables (like asparagus or zucchini) for roasting

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a large piece of aluminum foil, enough to wrap around the salmon fillets completely. If using vegetables, arrange them in the center of the foil.
  3. Place the salmon fillets on top of the foil or vegetables. Drizzle olive oil over the salmon, then sprinkle with minced garlic, salt, and pepper.
  4. Squeeze the juice of one lemon over the fillets, and then place lemon slices on top of each piece of salmon.
  5. Fold the foil over the salmon and vegetables, sealing it tightly to create a packet. This will trap steam and keep the salmon moist.
  6. Place the foil packet on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Carefully open the foil packet (watch out for steam!) and garnish with fresh herbs before serving.
