Baked Salmon in Foil with Asparagus Recipe

Ingredients:

  • 2 salmon fillets (about 6 ounces each)  
  • 1 bunch asparagus, trimmed
  • 1 lemon, juiced  
  • 2 tablespoons olive oil
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 sheets aluminum foil

Instructions:

  1. Preheat oven: Preheat your oven to 400°F (200°C).
  2. Prepare the foil packets: Cut two large sheets of aluminum foil.
  3. Season the salmon: Place the salmon fillets on the foil. Drizzle with olive oil, lemon juice, and sprinkle with dill, garlic powder, salt, and pepper.
  4. Add the asparagus: Place the trimmed asparagus spears next to the salmon on each foil packet.  
  5. Seal the packets: Fold the sides of the foil over the salmon and asparagus, then fold the top and bottom to create sealed packets.  
  6. Bake: Place the foil packets on a baking sheet and bake in the preheated oven for 18-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve: Carefully open the foil packets and serve immediately.

Tips:

  • For extra flavor, you can add a pat of butter or a sprinkle of Parmesan cheese to each packet before sealing.  
  • If you prefer a crispier asparagus, you can roast it separately on a baking sheet before adding it to the foil packets.
  • You can customize this recipe by adding your favorite herbs and spices.
