DESCRIPTION:
A hearty, comforting dish where a perfectly baked potato meets a golden fried egg. Crispy on the outside, fluffy on the inside, this is a simple yet satisfying meal perfect for breakfast, lunch, or a light dinner.
INGREDIENTS:
- 2 large baking potatoes
- 2 large eggs
- 2 tsp olive oil or butter
- Salt and pepper, to taste
- Optional toppings: shredded cheese, chives, sour cream, hot sauce
INSTRUCTIONS:
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly and pat dry. Prick them a few times with a fork.
- Rub each potato with a little olive oil and sprinkle with salt.
- Bake the potatoes directly on the oven rack for 45–60 minutes, until tender when pierced with a fork.
- While the potatoes bake, heat a small pan over medium heat. Add a teaspoon of oil or butter and fry the eggs sunny-side up or to your liking. Season with salt and pepper.
- Once baked, make a slit in the top of each potato and gently open it. Use a fork to fluff the inside slightly.
- Carefully place the fried egg into the center of the potato.
- Add optional toppings like cheese, chives, sour cream, or hot sauce. Serve immediately.
TIPS:
- For extra flavor, mix some butter, garlic, or herbs into the potato after fluffing.
- Use a fork to gently scoop a little potato out to make room for the egg if needed.
- Try baking eggs directly inside the potato for 10–12 minutes at the end for a “baked-in” version.
