Baked Potato with Fried Egg Inside

DESCRIPTION:
A hearty, comforting dish where a perfectly baked potato meets a golden fried egg. Crispy on the outside, fluffy on the inside, this is a simple yet satisfying meal perfect for breakfast, lunch, or a light dinner.

INGREDIENTS:

  • 2 large baking potatoes
  • 2 large eggs
  • 2 tsp olive oil or butter
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, chives, sour cream, hot sauce

INSTRUCTIONS:

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pat dry. Prick them a few times with a fork.
  3. Rub each potato with a little olive oil and sprinkle with salt.
  4. Bake the potatoes directly on the oven rack for 45–60 minutes, until tender when pierced with a fork.
  5. While the potatoes bake, heat a small pan over medium heat. Add a teaspoon of oil or butter and fry the eggs sunny-side up or to your liking. Season with salt and pepper.
  6. Once baked, make a slit in the top of each potato and gently open it. Use a fork to fluff the inside slightly.
  7. Carefully place the fried egg into the center of the potato.
  8. Add optional toppings like cheese, chives, sour cream, or hot sauce. Serve immediately.

  • For extra flavor, mix some butter, garlic, or herbs into the potato after fluffing.
  • Use a fork to gently scoop a little potato out to make room for the egg if needed.
