Ingredients

  • 3 large potatoes (Russet or Yukon Gold recommended)
  • 1-2 tablespoons olive oil or cooking spray
  • Salt, to taste
  • Optional seasonings: paprika, garlic powder, black pepper, rosemary, or any herbs/spices you prefer

Instructions

  1. Preheat Oven
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare Potatoes
    Wash and peel the potatoes. Using a mandoline or a sharp knife, slice the potatoes very thinly (about 1/8 inch or less).
  3. Soak Slices
    Place the potato slices in a large bowl of cold water and soak for at least 30 minutes. This removes excess starch, helping chips become crispier.
  4. Blanch and Dehydrate
    (Optional but recommended) Blanch the slices in boiling water for 2 minutes, then drain and pat dry thoroughly with a kitchen towel.
  5. Oil and Season
    Lightly coat the potato slices with olive oil or spray them evenly. Sprinkle salt and your preferred seasonings.
  6. Arrange on Baking Sheet
    Lay the slices in a single layer on the prepared baking sheet, making sure they don’t overlap.
  7. Bake
    Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy. Keep an eye on them toward the end to prevent burning.
  8. Cool and Serve
    Remove from oven and let cool on a wire rack. Chips will crisp up more as they cool. Serve immediately or store in an airtight container.
