- Preheat Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat. - Prepare Potatoes
Wash and peel the potatoes. Using a mandoline or a sharp knife, slice the potatoes very thinly (about 1/8 inch or less). - Soak Slices
Place the potato slices in a large bowl of cold water and soak for at least 30 minutes. This removes excess starch, helping chips become crispier. - Blanch and Dehydrate
(Optional but recommended) Blanch the slices in boiling water for 2 minutes, then drain and pat dry thoroughly with a kitchen towel. - Oil and Season
Lightly coat the potato slices with olive oil or spray them evenly. Sprinkle salt and your preferred seasonings. - Arrange on Baking Sheet
Lay the slices in a single layer on the prepared baking sheet, making sure they don’t overlap. - Bake
Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy. Keep an eye on them toward the end to prevent burning. - Cool and Serve
Remove from oven and let cool on a wire rack. Chips will crisp up more as they cool. Serve immediately or store in an airtight container.
