Baked Potato and Meatball Casserole Recipe

This hearty casserole combines tender baked potatoes, flavorful meatballs, and melted cheese to create a comforting and satisfying dish perfect for family dinners or gatherings. With a blend of savory seasonings, it’s a simple yet delicious meal that can be made in one pan.

Ingredients:

  • 4 large potatoes, peeled and cubed
  • 1 lb (450g) ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley (optional)
  • Olive oil for drizzling

Instructions:

  1. Preheat the oven to 400°F (200°C). Lightly grease a large baking dish.
  2. Toss the cubed potatoes with a drizzle of olive oil, salt, and pepper. Spread them evenly in the prepared baking dish. Bake for about 25-30 minutes or until the potatoes are tender and lightly golden.
  3. While the potatoes are baking, prepare the meatballs. In a large bowl, mix together the ground beef, breadcrumbs, egg, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Roll the mixture into small meatballs, about 1 inch in diameter.
