Ingredients
- 4 large eggs
- 1 cup cottage cheese (full-fat or low-fat)
- 1/4 cup shredded cheddar cheese (or any cheese you like)
- 2 tbsp chopped fresh chives or green onions
- Salt and pepper to taste
- 1/4 tsp garlic powder (optional)
- 1/4 tsp smoked paprika (optional)
- Butter or cooking spray (for greasing)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease 4 ramekins or a small baking dish with butter or cooking spray.
- In a mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, chives, salt, pepper, and optional seasonings until well combined.
- Pour the mixture evenly into the prepared ramekins or dish.
- Bake for 20–25 minutes, or until the eggs are set and the tops are lightly golden.
- Remove from the oven and let rest for 5 minutes before serving.
- Serve warm, optionally garnished with extra chives and a side of toast or fresh fruit.
