Ingredients
- 4 bone-in, skin-on chicken thighs (or breasts)
- 2 tablespoons olive oil or melted butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon dried thyme or rosemary
- Salt and black pepper, to taste
- 1 lemon, sliced (optional)
- Fresh herbs for garnish (parsley or thyme)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with foil for easy cleanup.
- Prepare Chicken: Pat the chicken pieces dry with paper towels. This helps them crisp up nicely.
- Season: In a small bowl, mix the olive oil (or melted butter) with garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub this mixture all over the chicken, making sure to coat under the skin too if possible.
- Arrange & Bake: Place the chicken in the baking dish, skin side up. Arrange lemon slices around if using. Bake for 35–45 minutes or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- Rest & Serve: Let the chicken rest for 5 minutes before serving. Garnish with fresh herbs if you like.
Tip: Serve with roasted vegetables, mashed potatoes, or a simple salad for a complete meal!
