Bacon Onion Tomato Pie – Recipe

Ingredients

  • 1 (9-inch) unbaked pie crust
  • 6 slices bacon, cooked and crumbled
  • 1 medium onion, thinly sliced
  • 2 medium tomatoes, sliced
  • 1 ½ cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • ½ cup mayonnaise
  • 2 tablespoons chopped fresh basil (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Crust: Place the pie crust into a 9-inch pie dish. Bake for 8–10 minutes until lightly golden. Remove and set aside.
  3. Cook Bacon & Onion: In a skillet, cook bacon until crispy. Remove, drain, and crumble. In the same skillet, sauté the sliced onion in the bacon drippings until soft and golden.
  4. Layer Filling: Sprinkle the crumbled bacon over the bottom of the pie crust. Top with sautéed onions, then arrange tomato slices on top. Season with salt and pepper.
  5. Make Cheese Topping: In a small bowl, mix the shredded cheese, mayonnaise, and basil. Spread this mixture evenly over the tomatoes.
  6. Bake: Bake for 30–35 minutes, or until the top is golden and bubbly.
  7. Serve: Let the pie cool for 5–10 minutes before slicing. Serve warm or at room temperature.
