Bacon Jalapeño Popper Eggrolls

These Bacon Jalapeño Popper Eggrolls are a crispy, delicious fusion of classic jalapeño poppers and crunchy eggrolls. Packed with creamy cheese, smoky bacon, and a kick of heat, they make the perfect appetizer or game-day snack!

Ingredients

  • 8 eggroll wrappers
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2-3 jalapeños, seeded and diced (adjust for spice level)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)

Instructions

  1. Prepare the Filling:
  • In a mixing bowl, combine the cream cheese, cheddar cheese, crumbled bacon, diced jalapeños, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  1. Assemble the Eggrolls:
  • Lay an eggroll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of the filling in the center of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water to seal the top corner. Repeat with remaining wrappers and filling.
  1. Fry the Eggrolls:
  • In a large skillet or deep fryer, heat oil to 350°F (175°C).
  • Carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  1. Serve:
  • Serve hot with your favorite dipping sauce, such as ranch or spicy mayo. Enjoy!

Feel free to customize the heat level by adding more or fewer jalapeños, or try adding other ingredients like shredded chicken for a heartier filling!
