Instructions
- In a medium mixing bowl, combine softened cream cheese and shredded cheddar cheese. Mix until smooth.
- Add crumbled bacon, green onions, garlic powder, smoked paprika, salt, and pepper. Stir until well combined.
- Using a small cookie scoop or spoon, portion the mixture into bite-sized amounts. Roll each portion into a ball.
- Place chopped pecans (or coating of choice) in a shallow dish and roll each cheese ball until fully coated.
- Arrange the mini cheese balls on a serving platter.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to blend.
- Serve with crackers, pretzels, or fresh veggies.
