Bacon and Sausage-Stuffed Potato Loaf

Ingredients

  • 4 large potatoes, baked and mashed
  • 6 slices of bacon, cooked and crumbled
  • 2 sausages, cooked and crumbled (any type you prefer)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tbsp butter
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • Fresh parsley, chopped (for garnish)
  • 1 loaf of Italian bread or a large baguette

Instructions

  1. Prepare the Potato Filling:
    • Preheat your oven to 375°F (190°C).
    • Bake the potatoes until soft (about 45 minutes to an hour). Let them cool slightly before peeling and mashing them.
    • In a skillet, cook the bacon until crispy, then crumble it into small pieces. Remove excess fat.
    • In the same skillet, sauté the onion and garlic in a little bit of oil until soft and fragrant.
  2. Combine the Filling:
    • In a large bowl, combine the mashed potatoes, crumbled bacon, cooked sausage, sautéed onion and garlic, sour cream, shredded cheddar cheese, butter, black pepper, paprika, and salt. Mix everything well.
  3. Prepare the Loaf:
    • Cut a loaf of Italian bread or a large baguette lengthwise, scooping out the inside to create a hollow cavity. Be sure to leave a small amount of the bread on the edges.
  4. Stuff the Loaf:
    • Spoon the potato mixture into the hollowed-out bread. Press down gently to ensure the filling is packed in.
  5. Bake:
    • Place the stuffed loaf on a baking sheet and bake for 20-25 minutes or until the top is golden and the cheese is melted.
  6. Serve:
    • Remove from the oven and garnish with freshly chopped parsley. Slice and serve warm as a hearty appetizer or side dish.
