Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- 2 tbsp green onions, chopped
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Butterfly each chicken breast (cut a slit lengthwise without slicing all the way through).
- Season the chicken with garlic powder, paprika, salt, and pepper on both sides.
- Make the Filling:
- In a bowl, mix the cream cheese, shredded cheddar, crumbled bacon, and green onions.
- Stuff the Chicken:
- Fill each chicken breast with the cheese and bacon mixture.
- Use toothpicks to secure the chicken closed if needed.
- Sear the Chicken:
- Heat olive oil in a skillet over medium-high heat.
- Sear each stuffed chicken breast for 2-3 minutes per side until golden brown.
- Bake:
- Transfer the skillet to the oven (or move chicken to a baking dish).
- Bake for 20-25 minutes, or until chicken is cooked through (internal temp reaches 165°F/75°C).
- Serve:
- Let rest for 5 minutes before serving.
- Enjoy with roasted veggies or a fresh salad on the side!
