BACON AND CHEEZE STUFFED CHICKEN

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • 2 tbsp green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Butterfly each chicken breast (cut a slit lengthwise without slicing all the way through).
    • Season the chicken with garlic powder, paprika, salt, and pepper on both sides.
  3. Make the Filling:
    • In a bowl, mix the cream cheese, shredded cheddar, crumbled bacon, and green onions.
  4. Stuff the Chicken:
    • Fill each chicken breast with the cheese and bacon mixture.
    • Use toothpicks to secure the chicken closed if needed.
  5. Sear the Chicken:
    • Heat olive oil in a skillet over medium-high heat.
    • Sear each stuffed chicken breast for 2-3 minutes per side until golden brown.
  6. Bake:
    • Transfer the skillet to the oven (or move chicken to a baking dish).
    • Bake for 20-25 minutes, or until chicken is cooked through (internal temp reaches 165°F/75°C).
  7. Serve:
    • Let rest for 5 minutes before serving.
    • Enjoy with roasted veggies or a fresh salad on the side!
