Ingredients:
- 2 ripe avocados, diced
- 1 ripe mango, diced
- 1 small red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, finely chopped (optional)
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Start by preparing the avocados and mango. Dice them into bite-sized pieces and place them in a large mixing bowl.
- Add the finely chopped red onion, cilantro, and jalapeño if you’re using it for a little extra heat.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
- Pour the dressing over the avocado and mango mixture, then gently toss everything together to coat the ingredients evenly.
- Taste and adjust the seasoning if needed. Add more lime juice for extra acidity or salt for balance.
- Serve immediately or chill in the fridge for about 10-15 minutes to let the flavors meld.
