Avocado, Egg & Chickpea Power Bowl

Ingredients

  • 1 ripe avocado, sliced
  • 2 boiled eggs, sliced or halved
  • 1 cup canned chickpeas, rinsed and drained
  • 1 medium tomato, diced
  • ¼ red onion, finely sliced
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice (or lime juice)
  • Salt and black pepper, to taste
  • Optional: chopped fresh cilantro or parsley, red pepper flakes

Instructions

  1. In a bowl, combine the chickpeas, diced tomato, and sliced onion. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to coat.
