- 2 ripe avocados, diced
- 2 cups fresh corn kernels (or 1 can of corn, drained)
- 1 cup cherry tomatoes, halved
- 1 small red onion, finely chopped
- 1/2 cup cilantro, chopped
- 1/2 teaspoon chili powder (optional)
- 1 tablespoon lime juice
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the diced avocados, corn kernels, cherry tomatoes, and red onion.
- Add in the chopped cilantro, lime juice, and chili powder if using. Stir gently to combine.
- Season with salt and pepper to taste.
- Serve immediately as a fresh side dish or refrigerate for up to 2 hours before serving for a chilled option.
