Avocado & Cherry Tomato Salad Recipe

Ingredients

  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 2 tablespoons fresh lemon or lime juice
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh cilantro or parsley (optional)
  • ½ teaspoon garlic powder or 1 small garlic clove, minced (optional)

Instructions

  1. Prep the vegetables:
    Cut the avocado into bite-sized cubes and halve the cherry tomatoes. Thinly slice the red onion.
  2. Make the dressing:
    In a small bowl, whisk together the lemon/lime juice, olive oil, garlic (if using), salt, and pepper.
  3. Combine ingredients:
    Gently toss the avocado, cherry tomatoes, and onion in a large bowl. Pour the dressing over the salad.
  4. Mix and serve:
    Carefully toss again to coat everything evenly. Top with chopped cilantro or parsley if desired.
  5. Enjoy immediately or chill for 10 minutes for extra freshness!
