Ingredients
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- 2 tablespoons fresh lemon or lime juice
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh cilantro or parsley (optional)
- ½ teaspoon garlic powder or 1 small garlic clove, minced (optional)
Instructions
- Prep the vegetables:
Cut the avocado into bite-sized cubes and halve the cherry tomatoes. Thinly slice the red onion. - Make the dressing:
In a small bowl, whisk together the lemon/lime juice, olive oil, garlic (if using), salt, and pepper. - Combine ingredients:
Gently toss the avocado, cherry tomatoes, and onion in a large bowl. Pour the dressing over the salad. - Mix and serve:
Carefully toss again to coat everything evenly. Top with chopped cilantro or parsley if desired. - Enjoy immediately or chill for 10 minutes for extra freshness!
