Ingredients

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 2 tbsp fresh cilantro or parsley, chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon or lime juice
  • Salt and pepper, to taste
  • Optional: ¼ tsp garlic powder or 1 small garlic clove, minced
  • Optional: Crumbled feta or fresh mozzarella pearls

Instructions

  1. In a large bowl, combine the diced avocados, halved cherry tomatoes, and sliced red onion.
  2. Drizzle with olive oil and lemon/lime juice.
  3. Add salt, pepper, and garlic (if using). Toss gently to coat everything evenly.
  4. Sprinkle with chopped cilantro or parsley.
  5. If using cheese, gently fold it in last.
  6. Serve immediately for the freshest taste, or chill for 10–15 minutes before serving.
