Ingredients:
For the Chicken Marinade:
- 4 boneless, skinless chicken thighs (or chicken breasts)
- 3 tablespoons olive oil
- 2 tablespoons plain Greek yogurt
- 3 cloves garlic, minced
- 1 lemon, juiced
- 2 teaspoons red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- Salt and pepper, to taste
For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1 cucumber, grated and drained of excess liquid
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper, to taste
For the Gyros:
- 4 pita bread rounds
- 1 red onion, thinly sliced
- 1 tomato, diced
- 1 cucumber, sliced
- 1/4 cup chopped fresh parsley
- Feta cheese (optional)
Instructions:
1. Marinate the Chicken:
- In a large bowl, combine the olive oil, Greek yogurt, garlic, lemon juice, red wine vinegar, oregano, cumin, smoked paprika, coriander, salt, and pepper.
- Add the chicken thighs, coating them well in the marinade. Cover and refrigerate for at least 1 hour (or up to 24 hours for best flavor).
2. Prepare the Tzatziki Sauce:
- While the chicken marinates, prepare the tzatziki sauce.
- In a medium bowl, mix the Greek yogurt, grated cucumber (squeezed to remove excess moisture), garlic, olive oil, lemon juice, dill, salt, and pepper.
- Cover and refrigerate until ready to use.
3. Cook the Chicken:
- Heat a grill or skillet over medium-high heat. Grill the chicken for about 5-6 minutes on each side, until fully cooked and nicely charred.
- Remove from the grill and let the chicken rest for a few minutes before slicing into thin strips.
4. Assemble the Gyros:
- Warm the pita bread in a skillet or on the grill for 1-2 minutes.
- Place a few slices of chicken on each pita.
- Top with sliced onion, diced tomato, cucumber slices, and fresh parsley. Add crumbled feta if desired.
- Drizzle generously with tzatziki sauce.
5. Serve:
- Fold the pita around the filling and serve immediately. Enjoy with extra tzatziki on the side!
