Ingredients:

For the Chicken Marinade:

  • 4 boneless, skinless chicken thighs (or chicken breasts)
  • 3 tablespoons olive oil
  • 2 tablespoons plain Greek yogurt
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 2 teaspoons red wine vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • Salt and pepper, to taste

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 cucumber, grated and drained of excess liquid
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper, to taste

For the Gyros:

  • 4 pita bread rounds
  • 1 red onion, thinly sliced
  • 1 tomato, diced
  • 1 cucumber, sliced
  • 1/4 cup chopped fresh parsley
  • Feta cheese (optional)

Instructions:

1. Marinate the Chicken:

  • In a large bowl, combine the olive oil, Greek yogurt, garlic, lemon juice, red wine vinegar, oregano, cumin, smoked paprika, coriander, salt, and pepper.
  • Add the chicken thighs, coating them well in the marinade. Cover and refrigerate for at least 1 hour (or up to 24 hours for best flavor).

2. Prepare the Tzatziki Sauce:

  • While the chicken marinates, prepare the tzatziki sauce.
  • In a medium bowl, mix the Greek yogurt, grated cucumber (squeezed to remove excess moisture), garlic, olive oil, lemon juice, dill, salt, and pepper.
  • Cover and refrigerate until ready to use.

3. Cook the Chicken:

  • Heat a grill or skillet over medium-high heat. Grill the chicken for about 5-6 minutes on each side, until fully cooked and nicely charred.
  • Remove from the grill and let the chicken rest for a few minutes before slicing into thin strips.

4. Assemble the Gyros:

  • Warm the pita bread in a skillet or on the grill for 1-2 minutes.
  • Place a few slices of chicken on each pita.
  • Top with sliced onion, diced tomato, cucumber slices, and fresh parsley. Add crumbled feta if desired.
  • Drizzle generously with tzatziki sauce.

5. Serve:

  • Fold the pita around the filling and serve immediately. Enjoy with extra tzatziki on the side!
